Fancy a healthy snack? Energy balls made from cashews & goji berries

Ingredients:


200 g goji berries

50 ml apple juice

400 g cashews

10 g hemp seeds (shelled or unpeeled)

40 g pistachio kernels

2 tablespoons honey


Preparation:


1. Put all ingredients in a food processor and mix until you reach the desired sticky consistency. (We like it crunchier, some prefer it softer :-))


2. Use a teaspoon and take the desired amount and form smaller or larger balls.


The balls will keep in the fridge for 1-2 weeks. A tasty tip. Yesterday we made apple sauce from apples from our garden and dipped a few balls into it. Delicious!!! And of course they are also delicious in yogurt :-)
