oatmeal yogurt bread

I made this bread for our New Year's Pound Special 2020. Your own whole grain bread!


As a spread we had beetroot hummus and the favorite a Pea and pistachio pesto . It tastes slightly sour because of the yogurt. The yogurt could also be replaced with kefir or buttermilk. For dessert, there would be small vegan chocolate cakes.



Ingredients


  • 300 ml natural yogurt

  • 170 g whole wheat flour

  • 170 g whole grain rye flour

  • 1/2 cube of yeast or 1 package of dry yeast

  • 1 teaspoon maple syrup or honey

  • 125 g oat flakes (preferably whole grain)

  • 1 teaspoon salt


Preparation:


1. Mix all ingredients together in a bowl to form a smooth dough.


2. Cover the dough and let it rise in a warm place for at least 30 minutes. Then knead the dough again and press it into a loaf pan lined with baking paper. And let the dough rise for another 30 minutes.


3. Now brush the bread with water and bake the bread on the lowest rack at 250°C for 15 minutes. Then reduce the temperature to 190°C and bake the bread for another 45 minutes.


4. Cool the bread on a wire rack.


Enjoy this healthy bread.


PS: You could bake several loaves of bread at once and freeze the finished loaves.
