After my vacation in Egypt in June, I was craving "home food". The food was delicious and varied, but I still wanted something different. Do you know that feeling?
When I went shopping with my family, I saw this fresh wild garlic and fresh asparagus. I immediately had an idea: pasta with wild garlic pesto, tomatoes, asparagus and mushrooms! The season was almost over so these ingredients went straight into the shopping cart. Here is the recipe for 4 people:
wild garlic pesto
The following ingredients go into the blender
1 bunch of wild garlic
50 g pine nuts
125 g Parmesan cheese or Grana Padano cheese (optional)
50 ml olive oil
pepper
optionally add some pasta water
Wash and chop vegetables
Cook 400 g pasta of your choice al dente and collect about 50 ml pasta water
Fry the vegetables in a little olive oil for 3 - 5 minutes
Then fold the pasta and pesto into the vegetables.
Arrange everything and enjoy. If you like meat or fish, you could serve it with a lamb fillet or salmon fillet, or add fillet tips.
