The year is slowly coming to an end, but we don't want to withhold this recipe from you. These wraps are light, aromatic & delicious and still a little warm thanks to the egg and rice.
Ingredients for 4 wraps:
4 nori sheets
250 g sushi rice
2 avocados
4 eggs
1/3 cucumber
1 bell pepper
2 beetroot bulbs (pre-cooked)
1 tablespoon coconut oil
Sauce:
4 tablespoons soy sauce
4 tablespoons olive oil or sesame oil
4 tablespoons lemon juice
4 tablespoons beetroot juice (from the beetroot pack)
sesame seeds for sprinkling
coriander leaves as desired
preparation
1. Cook the sushi rice according to the instructions.
2. Make scrambled eggs with coconut oil.
3. Wash & cut the vegetables as desired and arrange everything in small bowls.
4. Stir the sauce.
5. Everyone can now top their own nori sheet in the following order: Spread rice (while still warm) on the nori sheet (this will make the sheet soft) and then spread some egg and vegetables lengthwise.
6. Finally, drizzle some sauce, sesame seeds and coriander leaves onto your wrap and roll up the large roll.
Yummy. Not only do we love this wrap, but our children do too. Especially because they love sushi. Feel free to experiment with the filling (salmon, meat, other vegetables, other sauce) it's simply delicious.
