Now in summer, light, fresh dishes are just the thing. These waffles made from chickpea flour taste delicious and are also ideal for clean eating .
We are currently preparing for our camping holiday and I will definitely take the waffle iron with me ;-)
Ingredients for 4 people:
for the dough:
240g chickpea flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon dried herbs (e.g. oregano, marjoram, thyme)
175g natural yogurt or soy yogurt
6 eggs
2 tablespoons olive oil
Possibly some mineral water/milk (normal or plant-based) if the dough has become too thick.
for the salad:
2 tomatoes diced
1 pepper diced
1 romaine lettuce, chopped
1/2 cucumber diced
1/2 bunch of spring onions in rolls
1/2 bunch chopped parsley
2 tablespoons each of oil and vinegar
for the yogurt:
325 g natural yogurt or soy yogurt
2 tablespoons olive oil
2 teaspoons lemon juice
1 small garlic clove pressed
Fresh herbs such as mint, basil, parsley
salt & pepper
Preparation:
Put all the ingredients for the dough in a bowl and stir until you have a smooth dough.
Prepare the salad in a salad bowl and the yoghurt in a smaller bowl. Season both with salt and pepper.
Bake all the waffles in your waffle iron (no oil needed as it is in the batter) and keep them warm in the oven or bake the waffles at the table as needed.
