sweet potato and apple soup

Do you want to start the holidays with a light meal? Or do you just want something light and healthy after the lavish holiday meal? Then we have the perfect soup for you.


Fast, tasty and healthy - Merry Christmas!




Ingredients for 2 people:


  • 3 shallots

  • 400 g sweet potatoes

  • 2 tablespoons butter

  • 750 ml vegetable broth

  • 2 sour apples

  • 1–2 tablespoons lemon juice

  • 2 stalks of basil

  • salt and cayenne pepper


Preparation:


1. Peel and dice the shallots. Peel and wash the potatoes and cut into pieces of about 2 cm. Heat the butter in a pan. Sauté the shallots until translucent. Add the potatoes and sauté for about 2 minutes, turning them.


2. Deglaze with stock, bring to the boil, cover and cook over medium heat for 10-15 minutes.


3. Meanwhile, wash and peel the apples. Cut thin slices around the core of 1 apple. Cut the slices into thin sticks. Sprinkle with lemon juice. Core and dice the remaining apple. Wash the basil, shake dry and pick off the leaves.


4. Add the apple cubes to the soup and bring to the boil briefly. Puree the soup finely with a hand blender. Season with salt and cayenne pepper. Stir the apple strips into the soup. Serve in bowls sprinkled with basil.
