Quite often on a Saturday morning I let my family decide what should be on the breakfast table and guess what they often request?
PANCAKES!!!
And of course there are. I have already tried out a few recipes from the normal recipes with wheat flour, buttermilk pancakes,
Kefir pancakes until I created my own recipe, which is healthy but also very tasty. And of course there are all kinds of toppings, from savoury to sweet. This season there are delicious stone fruits and berries, which of course make everything look even tastier.
Ingredients for 4 people (2 large and 2 small ;))
4 eggs
100 g melted butter (or a neutral-tasting oil with little saturated fatty acids)
200 ml (kefir, buttermilk, almond milk or milk)
350 g wholemeal flour (spelt, rye or wheat)
1 teaspoon baking powder
1 tablespoon honey, maple syrup or coconut blossom sugar
Mix everything together in a bowl and add 2-3 tablespoons of batter to the pan for each pancake. Since the batter already contains fat, I recommend using a non-stick pan. Heat the oven to 100 °C to keep the finished pancakes warm.

cheese and tomato
Cottage cheese with hemp seeds, salt and pepper
fresh berries and marscarpone
Mango with strawberry puree
This is a feast for breakfast.
