Zucchini roll filled with a walnut paste as a starter or finger food

Are you looking for an appetizer that leaves you wanting more? This tasty, very aromatic roll offers it to you.


I planned about 5 rolls per person. They can be prepared 1-2 days in advance and on the day of eating you just have to arrange and garnish them! If they were in the fridge beforehand, I recommend taking them out 1 hour beforehand so that the aroma of the roll can develop at room temperature.



Ingredients for 4 people


Cut 2 - 3 medium-sized zucchinis into 3 - 4 mm thick strips (approx. 20 strips)


1 brush for coating the paint with oil



walnut paste

130 grams of walnuts

1 - 2 cloves of garlic

1 teaspoon paprika powder

1/2 teaspoon cumin

2 tablespoons olive oil

1 tablespoon white vinegar

1 pinch of cinnamon


topping

1 pomegranate deseeded


a few leaves of fresh coriander or parsley if desired




preparation


1. Brush the zucchini slices with oil and fry the slices until they become soft and malleable.


2. Prepare the walnut paste by placing all the ingredients in a blender and blending until smooth.


3. Take a slice and put some walnut paste on the whole slice using a teaspoon and your fingers or just on one end. Roll up the slice and place it in a bowl or on a plate.


4th Before serving: Place a few pomegranate seeds on each roll and a leaf of the herbs of your choice.


Your starter is ready.
